Title: Bruschetta-Topped Chicken & Spaghetti

Yield: 4 servings
8 oz Uncooked whole wheat
- spaghetti
4 Boned, skinneD chicken
- breast halves (5 oz ea)
1/2 ts Pepper
1 tb Olive oil
1 c Prepared bruschetta topping
1/3 c Shredded Italian cheese
- blend
2 tb Grated Parmesan cheese
Heat broiler. Cook spaghetti according to package
directions; drain. Pound chicken breasts with a meat
mallet to 1/2-in. thickness. Sprinkle with pepper. In a
large nonstick skillet, heat oil over medium heat; cook
chicken until no longer pink, 5-6 minutes on each side.
Transfer to an 8" square baking pan. Spoon bruschetta
topping over chicken; sprinkle with cheeses. Broil 3-4
in. from heat until cheese is golden brown, 5-6 minutes.
Serve with spaghetti.
