Title: Yellow Pepper Coulis

Yield: 2 Cups
1 tb Olive oil -OR-
1/4 c Water
1 sm Onion; chopped
3 md Yellow bell peppers;
- seeded, chopped
1/4 c Water
Salt
Black pepper; freshly ground
This smooth puree of sweet yellow peppers is especially good with
grilled or steamed vegetables, but it can also be used to add flavor
and color to soups, salad dressings, or other sauces.
Heat the olive oil or water in a large skillet over medium heat. Add
the onion and bell peppers, cover, and cook, stirring a few times,
until softened, about 5 minutes. Add the water, season to taste with
salt an pepper, and cook until the vegetables are very soft, about
15 minutes.
Transfer the cooked vegetables to a food processor or blender and
process until smooth.
Push the mixture through a fine-mesh strainer into a small saucepan
and heat over low heat. Use immediately or allow to cool, then
refrigerate in a tightly sealed container for up to 3 days. Reheat
over low heat.
